Dijon Mustard Dressing: A new twist on a classic

This recipe was inspired by Jane Esselstyn’s 321 dressing. I’ve tweaked it a bit by adding some nut butter and also a surprising sweetener.  That makes the formula for this dressing, 3-2-1-1/2. That’s 3 parts vinegar, 2 parts mustard, 1 part sweetener and 1/2 part nut butter.

For this recipe 1 part = 2 tablespoons.

Ingredients

  • 6 tablespoons apple cider vinegar
  • 4 tablespoons dijon mustard
  • 2 tablespoons sweet potatoes, baked or boiled ( a Hannah works the best, but any variety will do)
  • 1 tablespoon Tahini

 

Method

Blend all the ingredients with an immersion blender.

Different combos of vinegars, mustards, sweeteners and nut butters will give you very different results.
